Frosted Peanut Butter Cookie Bars – Quick, Easy and Gone in a Flash!

cookies1Here are the Frosted Peanut Butter Cookie Bars from my last post.  This is another example of how I don’t always cook and bake fancy and gourmet stuff.  I can make a good, gooey, quick dessert just like the best of them.

I am sorry about the picture of these being half Oreos, but they are just that good.  I took them out of the baking dish and put them on a platter, went to get my camera, and when I returned, there were only a few left, thus I had to supplement with Oreos.  One girl asked me to come live at her house and bake these for her daily.  They really are a piece of cake….or cookie to be exact.   I’m sorry, that was pretty lame.

The Ingredients of Love:  2 packages Betty Crocker Peanut Butter Cookie mix, 2 eggs, 6 T. Oil, 4 T. water, 1 can milk chocolate frosting

For all you fancy smancy people that are going to tell me what 6 T. equates to in cups – I tried but the converter I used told me .0675 cups or something so I gave up.

Dump your cookie mixes into a mixing bowl, and crack in your 2 eggs.eggsbowl21

I’m not going to tell you you have to crack your eggs in a separate bowl, but I usually manage to get a shell or two in mine so I do.  

Add your oil and your water to the mix.

I don’t even get my KitchenAid out for these babies.  I just use my hand mixer, or you could really even use a whisk.  Mix all together until well blended and spoon into a 9 x 13 baking dish.  Poke all over with a fork as this really helps everything bake evenly and allows the cookie underneath to get even heat.

Pop into your oven at 350 and bake for about 30 minutes.  Check them at 20 and keep checking until the top starts to brown just a little and a fork comes out clean when you stick it in the center.

Let cool and spread your chocolate frosting over top.  Don’t put the frosting on too soon or it’ll melt on the brownies and they’ll be impossible to serve.  

I promise you, make these cookie bars and your pan will soon be empty!

    More yumminess! I am using some of your recipes for my neighborhood Bunco gathering at my house this time.

    Here’s a hint about spreading chocolate frosting more easily: Remove the foil from the frosting tub, and heat in the microwave for 1 minute. The frosting will pour out easily and harden evenly as it cools. This works great if you are pouring it over something soft. Arrivederci!

      Oh thanks for the tip Gaye! I’ll have to try that next time! Wish I’d known that last weekend..we made tons of these for our son’s rehearsal dinner!
